This enjoyable salad blends Swanson® Chunk Chicken with macaroni, prepared Italian dressing, crisp cucumbers, fresh tomatoes, onion and parsley.
3 cups elbow macaroni or corkscrew-shaped pasta, cooked without salt and drained
2 cans (4.5 ounces each) Swanson® Premium White Chunk Chicken Breast in Water, drained
1 small cucumber, cut in half lengthwise and sliced (about 1 1/2 cups)
1 1/2 cups cherry tomatoes cut in half
1 small onion, chopped (about 1/4 cup)
3 tablespoons chopped fresh parsley
3/4 cup prepared fat free Italian salad dressing

My friend made this last night for bunko but used zucchini instead of cucumber and she did add a little mayo with salt and pepper. It was so good. She made a double batch and there was none left after eight women got through for the night!

I make my lunch for the week on Sundays, and this salad is so quick and simple to make, it tastes GREAT, and keeps very well in my fridge for a week. I make it at least once a month!
