Easy Chicken Enchiladas

Corn tortillas are wrapped around a scrumptious combination of chunk chicken breast, Cheddar cheese, green chiles and onion, topped with more Cheddar and enchilada sauce.

2 cans (4.5 ounces) Swanson® Premium White Chunk Chicken Breast in Water, drained

1 1/2 cups shredded Cheddar cheese (about 6 ounces)

1 cans (about 4 ounces) chopped green chiles, drained (optional)

1 small onion, chopped (about 1/4 cup)

1 1/4 cup prepared enchilada sauce

8 corn tortillas  (6-inch), warmed

Shredded lettuce  (optional)

Sour cream  (optional)

Diced tomato   (optional)

  • Heat the oven to 350°F. Stir the chicken, 1 cup of the cheese, chiles and onion in a medium bowl.
  • Spread half the enchilada sauce in the bottom of a 3-quart shallow baking dish.
  • Spread about 1/3 cup of the chicken mixture down the center of each tortilla. Roll the tortillas around the filling and place seam-side down in the baking dish.  Pour the remaining enchilada sauce over the enchiladas. Sprinkle with the remaining cheese. Cover the baking dish.
  • Bake for 25 minutes or until the filling is hot and bubbling. Top with the lettuce, sour cream and tomato, if desired.

    I've been making this for years! WE LOVE these. I first found this in a Campbells Quick Cookbook that I had. My one main change is that I use FLOUR tortillas. and we dont' put any of the extas on top. They dont' need it. I've also made it without the onion and it was still good or sometimes I just use the dried minced onion instead. If you don't like onions don't use the "real" onion like the recipe calls for because they don't get really soft (Well, I guess you could cut them smaller then I do :) This is staple in our house!

    I love this but I use flour tortillas instead
