Bittersweet Chocolate Glaze

This glaze covers cakes beautifully although it can be used as a chocolate sauce, too.

6 ounces bittersweet chocolate coarsely chopped

1 ounce unsweetened chocolate coarsely chopped

2 tablespoons light corn syrup

3 tablespoons unsalted butter softened

  • Put the bittersweet and unsweetened chocolate and the corn syrup in the top of a double boiler set over hot, not simmering, water. Stir until the chocolate melts and the chocolate is smooth. Remove from the heat.
  • Add the butter, a tablespoon at a time, stirring well after each addition until the butter is incorporated.
  • While the glaze is still warm, pour it over the cake. If it is not liquid enough to pour, heat gently, stirring with a wooden spoon.
