Cheddar Broccoli Chicken & Mashed Potatoes

Tender chicken, broccoli and a cheesy sauce are served over creamy mashed potatoes in this tasty, one-dish supper that's on the table in 30 minutes.

1 tablespoon vegetable oil

4 skinless, boneless chicken breast halves  (about 1 pound)

1 can (10 3/4 ounces) Campbell's® Condensed Broccoli Cheese Soup (Regular or 98% Fat Free)

1/3 cup milk

2 cup fresh or frozen broccoli flowerets

4 cups hot mashed potatoes

  • Heat the oil in a 10-inch skillet over medium-high heat.  Add the chicken and cook until well browned on both sides.
  • Stir the soup, milk and broccoli in the skillet and heat to a boil.  Reduce the heat to low.  Cover and cook for 5 minutes or until the chicken is cooked through.  Serve the chicken and sauce over the potatoes.

    This recipe was delicious. I usually don't like chicken and potatoes together but I decided to try it and I am so glad I did. It was so good my 3 year old smiled after his first bite and told me how good it was. I am definitely making this again.

    I did add 1/3 cup more milk to the recipe. My hubby likes thinner sauces. It was delicious and I will serve this dish again...many times.

    Being from Wisconsin, I love my cheese so I did put some shredded cheese on top of the potatoes before I put the chicken mixture on. I also added fresh ground pepper to the mixture. I would make this again but I think next time I am going to add a little fresh garlic in with the chicken when it's browning.
