2 tablespoon nonfat plain yogurt 2 tablespoon light mayonnaise 1/3 cup chopped celery 2 tablespoon finely chopped onion 1 can (9.75 ounces) Swanson® Premium White Chunk Chicken Breast in Water, drained8 slices Pepperidge Farm® Very Thin Soft 100% Whole Wheat Bread 1 medium tomato, cut into 8 slices4 lettuce leaves
Stir the yogurt, mayonnaise, celery, onion and chicken in a medium bowl. Divide the chicken mixture among 4 bread slices. Top with the tomato, lettuce and remaining bread slices. Serving Suggestion: Serve with a mixed green salad topped with orange sections and raspberry vinaigrette. For dessert serve almond biscotti. To make 2 sandwiches: Use 1 can (4.5 ounces) Swanson® Premium White Chunk Chicken Breast, drained, 1/4 cup chopped celery and reduce all other ingredients by half. Prepare as directed above. To make 1 sandwich: Use 1 can (3 ounces) Swanson® Premium White Chunk Chicken Breast, drained, 2 teaspoons nonfat plain yogurt, 2 teaspoons light mayonnaise, 2 tablespoons chopped celery, 2 teaspoons finely chopped onion, 2 slices Pepperidge Farm® 100%Natural 100% Whole Wheat Bread, 2 slices tomato and 1 lettuce leaf. Prepare as directed above.
